Jacob Sembler thrives in the space where farming, science, and craftsmanship intersect. His approach to winemaking is rooted in a deep respect for the land, shaped by years of working in vineyards. Whether in the vineyard or the cellar, he brings an unwavering attention to detail and a willingness to take on any challenge.
His path to wine was anything but conventional. While working in a centuries-old walled garden at a Tibetan Buddhist Meditation Centre in Ireland, he was first introduced to Biodynamic farming, sparking a fascination with regenerative agriculture. After finishing his degree at University of Oregon, Jacob refined his skills across the Willamette Valley, working with producers such as Benton-Lane, Willamette Valley Vineyards, Brooks, and Brick House, gaining experience in hospitality, vineyard operations, and national sales.
Jacob’s deep understanding of vineyard management and site-driven farming stems from both hands-on experience and formal training, earning recognition as Student of the Year at Chemeketa’s Vineyard Management Program. Working alongside Oregon’s top vineyard managers at Northwest Vineyard Services and Atlas Vineyard Management, he developed a meticulous approach to vineyard care and regenerative farming. With a versatile skill set and a sharp eye for detail, he brings a holistic perspective to winemaking, understanding wine from the ground up.
Jacob has become an indispensable part of the cellar at Walter Scott, bringing precision, adaptability, and a sharp instinct for winemaking. His ability to balance technical execution with intuitive decision-making makes him a key asset to our team.
When he’s not in the winery, Jacob is tending to Fayetta Vineyard, a 16-acre Pinot Noir site he and his husband, Maged, farm organically with the help of their ducks, goats, cows, and an enthusiastic crew of dogs and cats. Originally from Florida, he has been fully embraced by Willamette Valley’s wine community, where he continues to push himself, refine his skills, and deepen his understanding of winemaking and farming.
